Homemade Spelt Crackers

with Organic Spelt Kernels

Spelt Crackers are perfect for the holiday season with a little history and modern twist of ingredients.  Spelt is one of the oldest cultivated crops in human history. It is believed to have been used between 7,000 and 8,000 years ago.

Furthermore, Spelt is an ancient grain that has lately made a comeback in North America.  It has been popular through the decades in many European countries.

These chewy crackers are always perfect for dinner parties! Infused with nutritious seeds like Sunflower Seeds, Flax Seeds and Chia Seeds. The combination of seeds is rich in healthy fatty acids and antioxidants, this recipe is nut free.

These crackers may look intimidating to make but they come together fast and easy. Perfect toppers are avocado and Spanish paprika.

Organic Spelt Kernels

Spelt Crackers

with Organic Spelt Kernels

Westpoint Ingredients

  • 1 3/4 cup of Organic Stoneground Spelt Flour
  • 1 cup of Semolina
  • 1 teaspoon of Baking Powder
  • 1 teaspoon of Fine Sea Salt
  • 1/3 cup of Sunflower Seeds
  • 1/3 cup of Flax Seeds
  • 1/4 cup of Chia Seeds
  • 1/2 cup pf Spelt Kernels (cooked)

Other Ingredients

  • 2 teaspoon of Maple Syrup
  • 1/4 cup of Avocado Oil

Method

1) Place spelt kernels in a small pot, add 1 3/4 cup of water, bring to a boil then reduce to a simmer, cover for 45 minutes. Drain remaining liquid and let cool on a baking sheet.
2) Preheat oven to 220º F.
3) Toast sunflower seeds 20 to 30 minutes, tossing every so often to avoid burning them. Set aside to cool on baking sheet with spelt kernels.
4) Combined all ingredients in a large bowl, mixing until they form a ball.
5) Knead dough for 5 to 8 minutes, then place in well oiled bowl. Cover and let rest for 30 minutes.
6) Place dough on floured surface and roll it out until 1/2 cm thick, making sure it is even. Use flour to avoid sticking, semolina is best.
7) Preheat oven to 375ºF (190º C)
8) Cut your rolled dough into 1 inch squares (or whatever shape your heart desires). Place crackers on lined baking sheet and bake for 7 minutes. Flip crackers and bake for another 7 to 10 minutes.
