Autumn is the time when you will see nothing but pumpkin-related things. From pumpkin spice latte, pumpkin pie, pumpkin soup, roasted pumpkin… you name it. To celebrate the Fall and Thanksgiving season, we thought we should join the trend too.

Let’s be real, is there anyone here who doesn’t like brownies? We decided to create a recipe that combines two of the hottest foods – PUMPKIN PIE BROWNIES!

Pumpkin Pie Brownies

Fun fact: did you know that pumpkin pie is actually quite a healthy dessert? Of course, it depends on the amount of sugar and butter you add. In this case, opt for healthier alternatives such as almond flour, coconut oil and honey! It is surprisingly a great source of beta-carotene. One slice contains more than the recommended daily value of Vitamin A, which benefits our eyes and immune system. The pumpkin filling is also rich in potassium, iron and Vitamin C.

Pumpkin Pie Brownies

with Pumpkin Pie Spice Blend

Cook Time: 45 min

Westpoint Ingredients

  • Brownie Mix:
  • 1/4 cup of Organic Natural Cocoa Powder
  • 1/3 cup of Organic Gluten Free All Purpose Flour Mix
  • Pumpkin Pie Mix:
  • 2 teaspoons of Pumpkin Pie Spice Blend

Other Ingredients

  • Brownie Mix:
  • 1/2 teaspoon of Salt
  • 2 Eggs
  • 1/3 cup of Honey
  • 1/2 cup of Coconut Oil
  • Pumpkin Pie Mix:
  • 1 can of 15 oz Pumpkin Puree
  • 1 can of 14 oz Sweetened Condensed Milk
  • 2 Eggs
  • 1/2 teaspoon of Salt

Method

1) Preheat oven to 350°F.
2) In a small bowl, add flour, cocoa powder and salt. Stir until combined.
3) In a separate bowl, whisk together the eggs, honey and coconut oil.
4) Combine dry and wet mixture and stir until fully incorporated.
5) Pour brownie mixture into greased 9x9 pan.
6) Add pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice and salt in a bowl. Mix until fully incorporated.
7) Pour pumpkin pie mixture on top of brownie mixture.
8) Bake for 45-60 minutes and let cool completely. Enjoy!
