Fun fact! Did you know that air-popped popcorn (not the ones in movie theatres with butter dripping all over) is one of the healthiest snacks and contains various health benefits? Popcorn is a natural whole grain, meaning it is high in fibre. It also generally contains minerals like manganese and magnesium, vitamin E and B complex vitamins.

This Easter Caramel Popcorn is a sweet and healthy option everyone will love. We even used beet powder to give the popcorn a nice pink shade that matches the Spring season!

Easter Caramel Popcorn

with Organic Popcorn

Westpoint Ingredients

  • 1/2 cup of Organic Popcorn
  • 1/2 cup of Demerara Style Brown Sugar
  • 1/2 teaspoon of Baking Soda
  • 1/4 – 1/2 teaspoon of Red Beet Powder

Other Ingredients

  • 1/2 cup of Coconut Oil (plus 1 extra tablespoon)
  • 1/4 cup of Honey
  • 1/4 teaspoon of Vanilla Extract
  • 3 packs of Cadbury Mini Eggs (42g)

Method

1) Place 1 tablespoon of coconut oil into a pot and melt over medium-high heat. Add in the popcorn kernels and cover with lid. Shake back and forth until kernels finish popping. Remove popcorn from heat and pour into large bowl.
2) In another pot, add in brown sugar, beet powder, remaining coconut oil and honey. Cook over medium-high heat until mixture starts bubbling.
3) Turn heat off and add in baking soda. Continue to mix as you add the vanilla extract. It will form a cloudy mixture.
4) Pour caramel over popcorn in a giant bowl. Mix until all popcorn is covered in caramel sauce.
5) Add in Cadbury mini eggs into popcorn mixture and enjoy!
