Description
The mature lima bean is white to off-white in colour, 1 to 3 cm long and oval to kidney-shaped. Lima beans are commonly eaten alone as a vegetable side dish or are added to soups and casseroles.

Directions
Rinse 1 cup of beans. Pour into boiling water and cover. Soak overnight, at least 6 hours. Drain and discard soaking water. Add 4 cups fresh water and simmer over low heat until tender, approximately 2-2 1/2 hours.

Storage
When stored in a cool (preferably less than 60˚F) and dry location (less than 65% humidity), shelf life is approximately 2 years.
