Baked Penne Pasta

with Textured Pea Protein Minces (63% Protein) Textured Pea Protein Minces (70% Protein)

Cook Time: 20 min

Westpoint Ingredients

  • 3 cup Textured Pea Protein Minces 63% or 70%

Other Ingredients

  • 1 kg Cooked Penne Pasta
  • 3 cups Vegetable Broth
  • 185 grams Diced onions (approx. 3/8 dice, approx. one onion)
  • 185 grams diced Celery (approx. Two stalks)
  • 220 grams Diced Carrots (approx. Two carrots)
  • 3 crushed Garlic cloves
  • 2 Tablespoons Fresh Basil shredded
  • 2 cups Thick Tomato sauce
  • 1 tablespoon sugar
  • 1 ½ cup shredded Cheddar and Mozzarella Cheese

Method

1) Sauté the carrots, onions, celery, and garlic, add the vegetable stock and textured pea protein. Bring to the boil then simmer for about 10 minutes
2) Add the tomato sauce mix and continue to simmer another 5-6 minutes
3) Add the basil and remove from heat
4) Arrange half of the Penne on the bottom of a casserole dish cover with half of the sauce
5) Add a second layer of Penne and the rest of the sauce, sprinkle the cheese on top and bake at 325 for about 20 minutes or until the cheese is golden brown, and serve
