French lentils are often considered to be the best and most delicate of all lentils, with their distinctive blue-green speckles and rich flavour. They hold their shape well, but tend to take a bit longer to cook than other varieties. Those grown in the thin volcanic soil of Puy in south-central France are considered to be the superior variety.

  • Directions

In a large pot, bring 3 cups water (per 1 cup lentils) to a boil. Add lentils and simmer partly covered for about 45 minutes; check for tenderness after 18-20 minutes. To retain firmness, try adding a teaspoon of oil to the water before adding the lentils.

  • Uses

Try using French Du Puy lentils in soups, various vegetarian dishes, or sprouted for added nutrition.

  • Storage

When stored in a cool and dry location, shelf life is approximately 2 years.
